- cocoa (very tiny amount)
- toast brown sugar then food processor
- celery salt
- celery powder

Best wood for smoking: oak, hickory, cherry

Brisket should be able to stretch but pull apart; cut pencil thick

roast prime rib over fresh veggies (moisture)
